Peri Peri Chicken Meatloaf
This is a great way to spice up chicken meat loaf. Peri Peri is a Portuguese grilling sauce that complements chicken, it's spicy and flavourful.
Ingredients
- 1 cup Bread crumbs
- 2 ribs Celery Chopped
- 1 medium Onion Chopped
- 2 large Eggs Lightly beaten
- 1/2 cup Peri Peri Grilling Sauce Available at most grocery stores
- 3 cloves Garlic Minced
- 1 tsp Black Pepper Coarse Ground
- 1 cup Feta Cheese Crumbled, divided
- 1 pound Ground Chicken Orange Door Acres Ground Chicken
- 6 Strips Bacon
Glaze
- 1/4 cup Peri Peri Grilling Sauce
- 4 tsp Dijon Mustard
- 4 tsp Honey
Instructions
- Preheat oven to 375°
- In a large mixing bowl combine the first 7 ingredients thoroughly, gently fold in the Feta cheese. Add the ground chicken, mix lightly but thoroughly.
- Form an 8 x 4 inch loaf in a 9 x 13 lasagna pan. Cover with bacon
- For the glaze, mix the Peri Peri sauce, Dijon mustard and honey in a small bowl and brush over meat loaf
- Bake 45 minutes or until the internal temperature is 165°
- Add remaining Feta cheese, cover and let stand for 10 minutes before serving
